Coffee, my love

There is just something special about drinking coffee outside. I am not sure what it is, but when we go glamping, it is the first thing I look forward to. Second being whatever hike we do that day.

The last time we went glamping (camping in a cabin or camper versus a tent) was at First Landing State Park near Virginia Beach. Of course, the first thing I did when I woke up (after a yummy breakfast) was have coffee outside on the screened porch. It is so lovely to enjoy this wooded view when Virginia Beach is so close by. After a little relaxing, we went on a hike where we saw the Bald Cypress Swamp (look closely and you will see a rainbow of colors).

We came home, ate lunch, then grabbed our kite and off we went to the beach. This park has it all! Swamps, beach, hikes, and restaurants close by in case you need something extra yummy. We ordered take out (Covid-style) from a Bite of Maine. OMG! It was beyond delicious. I highly recommend them!

Playing by the Chesapeake Bay

I often forget things when we go camping. This time, I forgot towels! Oh my! What I didn’t forget is the coffee. It is the smell when it is brewing, the warm mug in your hands, and of course the creamer. Ahh the creamer!

What I don’t love is perhaps the many, strange ingredients in those sweet (but oh so yummy) store creamers. So sometimes, I make my own. I have to admit…this one is the best so far!!

Homemade creamer

In a pot, heat up and stir:

  • 1 can lite coconut milk
  • 3/4 cup almond milk
  • 1 Tablespoon vanilla extract
  • 2 teaspoons cinnamon
  • 1 Tablespoon maple syrup

Truth be told, this wasn’t sweet enough for me. I also added in 1 1/2 Tablespoon sugar to the heated mixture. I need to work on my sweet tooth because it is out of control. But hey, at least it doesn’t have all those ingredients that I cannot pronounce like on the store bought creamers! It is work in progress, but this one is a great start! If you try it, let me know!
